rainbow butterfly cupcakes

Been as I am starting to get more views etc. on this blog I have decided to start doing some different types of post. As you may guess from the title I am doing a baking tutorial on how to make rainbow butterfly cupcakes- these are really yummy and look cute!
You need to get 3 eggs, 180g stork butter, 180g self raising flour, 180g caster sugar, vanilla extract or essence, cupcake cases, 4 food colourings, 175g icing sugar and an extra 75g of stork for the buttercream. Weight out all your ingredients and put them into a mixer (except icing sugar, food colourings and the extra stork).

If you don't have a mixer (mine is Andrew James), put them into a mixing bowl and mix by a hand mixer or just use a wooden spoon.

(Just a picture of all the ingredients I used...)

Wait until your mixture looks creamy and is quite thick and then separate equally into 4 bowls.

Take your food colourings (I recommend red, yellow, green and blue) and dye each separate bowl of mixture a different colour until it is all blended.

Put 12 cupcake cases into a tray. Put a spoonful of each mixture (from the separate bowls) into each cupcake case evenly. You can leave it layered so the colouring is neat or you can stick a cocktail stick in and swirl it around so the colours all mix around.. I think this looks better.

Cook your cupcake for 20 - 25 minutes around 180 degrees celsius (fan oven) and put them on a cooling rack. Once there are cold, getting a nice and cut a circle into the middle of the cake (about half way down) and cut the circle in half - these are the butterfly wings.

Create your buttercream by putting the stork and icing sugar into a mixer and blending till it is creamy. Put a spoonful into the wholes of the cake and stick your "wings" in the cream.

Ta - Da! your finished cakes should look like this! Enjoy, hope you liked this different type of post.

See you soon Xxx
